Instructions
- Wash bamboo shoot in lukewarm water and drain.
- Wash pork and drain thoroughly and cut into medium-sized pieces.
- Put pork pieces in a heavy-bottom vessel (without any oil or water). Cook for 20-25 minutes, stirring occasionally, till water from pork evaporates and it turns light brown.
- Put in the bamboo shoot and a cup of water, and cook for a few minutes (keep stirring occasionally).
- Mix in green chillies, ginger, salt and cook till dry.
- Add 2 cups water and cook for about 15 minutes till pork is well lone.
- 1 heind in rice powder to thicken gravy and cook for another 15 minutes.
Transfer it into a serving dish and garnish with fine ginger juliennes and two chillies split into two.
